Chicken Lorenzo Is Great Family or Party Dish

Chicken Lorenzo is a deliciously rich supper entree that partners cream of mushroom soup, American and Parmesan cheese and sliced mushrooms with diced pimiento and rice. A light spinach salad is the ideal accompaniment.

In 2-quart saucepan, bring 1 1/3 cup water and 1/2 teaspoon salt to boil. Stir in 2/3 cup long grain rice. Cover, lower heat and simmer 20 minutes. In 1-quart saucepan combine 1 (10 3/4-ounce) can cream of mushroom soup, 1 cup shredded American cheese, 1/4 cup milk, 1/4 cup grated Parmesan cheese and 1 (2 1/2-ounce) jar sliced mushrooms, drained. Stir in 2 tablespoons diced pimiento, 1 teaspoon Worcestershire sauce and dash garlic powder. Heat until bubbly. Add 1 (5 1/2-ounce) can chunky white chicken, flaked and heat through. Serve over fluffy hot rice. Makes 4 servings.
