Advice on How to Choose Broccoli

When choosing broccoli, size is unimportant, but avoid broccoli with wilted or woody stems or yellow open buds. Choose dark-green buds atop firm, fresh stems. To store, place broccoli in closed plastic bag in the refrigerator, where it should keep about 4 or 5 days.

Preparing broccoli is a simple task--just remember that the bud cooks faster than the stalk so it should be split several times lengthwise. Do not, however, cut stem away from bud. Place in an inch of boiling salted water, cover and steam over medium heat until just tender, about 10 or 15 minutes. Don’t overcook or it will become dull green and limp.

Dressing the broccoli is equally as easy. Remove from water and serve at once, seasoned with salt, pepper and butter or margarine.
