Quick Spanish Cod Pan-Bake is fish prepared in a flavorful sauce with a cook’s choice of vegetables and other ingredients, all baked together in a chunky green chile salsa or picante sauce. Served over a variety of hot cooked vegetables, this is a perfect dish to serve if the family is observing the meatless Good Friday tradition during the Easter season.
QUICK SPANISH COD PAN-BAKE
1 pound cod fillets
1/2 green pepper, cut into 1/4-inch strips
2 tablespoons chopped shallots
1 tablespoon olive oil
1 cup mild green chile salsa or chunky picante sauce
1/3 cup sliced pimiento-stuffed green olives
1/2 teaspoon saffron
Season cod to taste with salt and pepper. Arrange in shallow casserole.
Saute green pepper and shallots in hot oil until tender. Stir in salsa, olives and saffron. Place cod in pan and spoon some of sauce over fish.
Cover and bake at 450 degrees 15 to 20 minutes or until fish flakes easily when tested with fork. Makes 2 servings.
