DANCE: As a member of the Sisters of St. Joseph of Orange, Beth Burns, above, founded a troupe that has trained more than 800 disadvantaged youths in ballet and dance and touched another 7,000 through outreach programs. . . . Now Burns has left the order to “continue . . . spiritual development in other paths.” But she will continue to run the St. Joseph Ballet school and company, which dedicated a new home Sunday in Santa Ana’s Fiesta Marketplace, helped by a $60,000 grant from the city and five years’ free rent.
