Chicken Casserole With Zest Makes Attractive Party Meal

Soy sauce, sugar and cider vinegar provide a little flavor oomph for a simple oven-baked chicken casserole. Canned pimientos add a nice color touch.

This great casserole makes a tasty family or party meal.

Add an assortment of appetizers, a mixed green salad, a combination of vegetables, bread and a light dessert and you have a special dinner.

CHICKEN CASSEROLE

3 pounds chicken pieces

Salt

3 tablespoons oil

1 (7-ounce) jar pimientos

1 large onion, quartered

1 cup chicken broth

1 tablespoon cornstarch

1 tablespoon soy sauce

1 tablespoon sugar

3 tablespoons cider vinegar

Season chicken to taste with salt and brown in hot oil. Cover skillet, reduce heat to low and simmer about 20 minutes or until chicken is tender. Arrange chicken in large casserole.

Drain pimientos, reserving liquid. Arrange pimiento pieces over chicken. Separate onion quarters into layers and cook in drippings in skillet. Combine broth, cornstarch, soy sauce, pimiento liquid, sugar and vinegar and add to skillet.

Cook, stirring, until sauce is slightly thickened. Pour over chicken in casserole. Cover and bake at 375 degrees 15 minutes. Remove cover and bake 15 minutes longer. Makes 6 servings.
