Leftover Roast Beef Makes Hot Lunch Sandwich

When it’s lunchtime and you have a choice between leftover roast beef and packaged cold cuts, choose the roast beef. With the help of the microwave oven, a jar of chili sauce and a green pepper, you can have a hot and satisfying sandwich filling, ideal for topping hamburger buns, in about 10 minutes. Serve with a lettuce, tomato and cucumber salad to round out the meal.

Cut 5 to 6 slices cooked roast beef into strips. Mix 1 (12-ounce) jar chili sauce with 1 coarsely chopped green pepper in 1 1/2-quart microwave-safe casserole.

Cover and microwave on MEDIUM-HIGH (70% power) 5 minutes or until hot. Add beef, cover and microwave at same temperature 4 to 5 minutes. Divide evenly and serve on 4 hamburger buns. Makes 4 servings.
