Do-Ahead Dishes Will Save Time During a Holiday

There is so much to be done during a holiday. That’s why smart hosts and hostesses will prepare do-ahead appetizers, entrees and desserts well in advance--freezing or refrigerating them until ready for use--thus saving themselves hours during the hectic day.

Holiday Shrimp Hors d’Oeuvres is a wonderfully simple and tasty appetizer that makes a perfect accompaniment for a holiday dinner. For convenience, the recipe calls for packaged golden mushroom soup mix. Make the shrimp mixture ahead of time, refrigerate until needed, then whisk rolled mixture into the oven before serving.

In medium bowl combine 2 eggs, 1/4 cup milk, 1/4 teaspoon ginger and 1 envelope golden mushroom soup mix. Stir in 2 cups finely chopped cooked shrimp, about 1 pound, and 1/2 cup soft bread crumbs.

Shape 1 heaping teaspoon into ball, repeat with remaining mixture, then roll in 1 cup flaked coconut. Place on well-greased baking sheet and bake at 350 degrees 20 minutes. Makes about 4 dozen appetizers.
