Quick and Easy Picnic Dessert

A carrot cake using nectarines can be frozen for use later in the year.

NECTARINE-CARROT PICNIC CAKE

1 cup flour

1/2 cup wheat germ

3/4 cup sugar

3/4 teaspoon soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 1/2 teaspoons cinnamon

1/2 teaspoon nutmeg

2 eggs, lightly beaten

1/2 cup oil

1 teaspoon vanilla

1 cup carrots, grated

1 nectarine, diced

1/2 cup chopped walnuts

Powdered sugar

Mix flour, wheat germ, sugar, soda, baking powder, salt, cinnamon and nutmeg in large bowl. Add eggs, oil and vanilla. Mix until smooth. Stir in carrots, nectarine and walnuts. Pour into well-greased and floured 7- or 7 1/2-cup mold or 9-inch ring mold.

Bake at 350 degrees 50 minutes or until wood pick inserted into center comes out clean. Cool 10 to 15 minutes in pan, then invert and cool on rack. Sprinkle top with powdered sugar or spread with cream cheese icing, if desired. Makes 1 (7- or 7 1/2-cup) mold or 9-inch ring.
