My initial joy at seeing "The Vegetarian Solution" (Aug. 15) turned to disappointment as I read the recipes by Chef John Ash. Did you realize that four of his five recipes call for whole milk cheeses, half-and-half, butter and eggs? How can he claim that he "follows American Heart Assn. guidelines"? No wonder "you wouldn't miss steak, for example, if you were eating Ash's ragout of meaty-tasting exotic mushrooms in a velvety wine, butter and cream sauce . . . ."
