The World of Ribs : The Great Rib Side Dish--Coleslaw

Duplex chef-owner Mark Carter says that this is his grandmother’s recipe. I say that it’s the best coleslaw I’ve ever eaten.

DUPLEX COLESLAW

1 head green cabbage, shredded

2 cups diced onions

1 large green pepper, diced

1 large carrot, shredded

1 3/4 cups mayonnaise

3/4 cup sugar

3/4 cup white vinegar

Combine cabbage, onions, green pepper and carrot in large bowl. Combine mayonnaise and sugar in small bowl, then add vinegar. Pour over vegetables and toss.

Refrigerate 24 hours before serving. Makes about 2 quarts.
