I think all sushi restaurants should reduce the amount of tuna they use and change their menus. We have to try to make more vegetable sushi, or mixed fish and vegetable sushi. Little by little, we must reduce the amount of tuna we use.

But American people and Japanese people still like tuna--they eat a lot. So we have to think about the customer, too.

This is the problem with all the fish in the world. We must produce the fish ourselves. We tried fish farms 50 or 100 years ago in Japan, then we tried to reduce intake of tuna and other kinds of fish from the ocean. But it’s still not enough. We need more fish farms, in every country. In the Pacific, in the Atlantic.

And another problem is pollution. That is going to kill many kinds of fish. So we must clean up the oceans first. It’s very hard to solve this problem. But it is possible.
