The core question we should be asking isn’t whether the new food contains allergens or toxic substances or if the levels of important nutrients have changed, but whether these nutrients will still be able to be absorbed. Will a potato that fends off grease also not be able to be broken down in the digestive tract and, even more important, will our bodies not be able to assimilate strange, unrecognizable genes? Will malnourishment thrive on our full stomachs? Will our population die out with our bellies full?
