Fast-Food Court for Health and Safety

Dana Parsons never ceases to amaze me (“Fast Food for Thought,” Aug. 19). Once again he bases his opinion on vast personal knowledge of a subject without knowing any facts. Capistrano Valley High School is beginning a “fast-food” food court on the school campus. The administrators of the program have the best interests of the kids in mind, including their safety and nutrition.

If Parsons took a closer look, he would find out that the meal combinations that will be offered are as nutritious, and in some cases more nutritious, as comparable meals prepared in the district. Most are well under the 30% fat level recommended by the American Heart Assn. No one in the dietary field recommends eating the same foods every day, as Mr. Parsons chose to do. Variety and moderation are key to a healthy diet.

Capistrano Valley is offering another alternative to students, in addition to their many other healthy choices. They’re to be commended for putting students’ health, welfare and well-being above all else.
