LIGHT STYLE : Cook Your Broccoli, Dear

One way to get kids to eat their vegetables is to get them involved in the cooking process. This recipe for Broccoli Stir-Fry is easy enough to do just that.

BROCCOLI STIR-FRY 1/2 pound broccoli 1/4 cup low-salt chicken broth or water 2 tablespoons minced onion, optional 2 teaspoons low-salt soy sauce Rinse broccoli, separating flowery heads from stems. Peel and trim stems and slice. Heat broth in skillet or wok over high heat. Add broccoli slices, broccoli heads and onion. Stir-fry 3 minutes, stirring with long wooden spoon. Stir in soy sauce. Reduce heat to low and simmer 2 minutes or until tender-crisp. Makes 4 servings. Each serving contains about: 24 calories; 53 milligrams sodium; 0 cholesterol; trace fat; 5 grams carbohydrates; trace protein; 1 gram fiber.
