Vivace Prosecco, non-vintage ($7)-- This non-vintage semi-sparkling wine is a sheer delight, not to mention a bargain. The apple/melon scent and the soft, slightly sweet yet crisp finish are a testament to brilliant winemaking and to a technique specifically designed to avoid the additional tax on bubbly.

The wine is a perfect aperitif for warm summer days and works well with a variety of lighter foods.

Two cautions: To remove the deep and tapered corks, use a traditional auger-type corkscrew, not a prong-type or pump opener. And keep the wine corked and on ice until it is consumed, since the bubbles dissipate more quickly than in true sparkling wine. The wine tastes best chilled.
