1991 Corbett Canyon Vineyards Cabernet Sauvignon “Reserve,” Napa Valley ($8)-- Blending grapes from different vineyards into a single, harmonious wine is a complex and demanding task. To make such a wine in a large quantity and sell it for a moderate price is even more difficult.

Corbett Canyon, based in San Luis Obispo County, went all over the Napa Valley to find the juice to blend for this wine, and did an excellent job. It’s very dry and flavorful with cherry/herbal notes, a bit like a Bordeaux, but there is ample fullness in the finish. The good acidity makes it an excellent match with beef dishes. It’s often seen at $6.50, or even a bit less.
