Roasted garlic has a sweet taste and creamy texture that might be a surprise to those who haven’t tried it. Garlic can be roasted either in heads (particularly good when served with roasted meats) or in individual cloves. Either way, lightly coat unpeeled garlic with olive oil, then wrap tightly in aluminum foil. Place in baking dish and bake at 350 degrees until soft, about 20 to 30 minutes. Remove from oven and, when cool enough to handle, squeeze from peel.
