The 1995 Tavel ($14.99) from the Rho^ne’s legendary winemaker Marcel Guigal is all that a rose should be. It has a delicate scent of wild strawberries and enough structure and finesse to hold its own against the sun-drenched cuisine of Provence--or California. Served chilled, it is a perfect late summer aperitif with tapenade or olives but versatile enough to accompany aioli, bouillabaisse and grilled birds.
