How to cook up a lovely evening of wining and dining? Recipe follows: Take six vintages of Dominus (wines made by Bordeaux’s Christian Moueix, owner of Chateau Petrus), add some Napa Valley Perrier-Jouet and a 20-year-old Sandeman Tawny Port. Marry that with an innovative menu at Michael’s and call it a night. Hardly shabby.

That’s what to expect Tuesday at the wine dinner hosted by Epicurus restaurant. The sparkler accompanies hors d’oeuvres including new potatoes with sour cream and caviar and gravlax on brioche toast with dill sauce. First course: squab in Pinot Noir cassis with ginger and scallions (served with 1985, 1986 and 1988 Dominus). Next are aged prime New York steak and frites (1989, 1991, 1992 Dominus), then a selection of cheeses. Dessert, a multilayered chocolate mousse cake, signals the arrival of the Sandeman Tawny Port.
