The motto for Hoppin’ John Martin Taylor’s just-released “The Fearless Frying Cookbook” (Workman, $10.95) says it all: “No Broiled Food.” Taylor, best-known for “Hoppin’ John’s Lowcountry Cooking,” has written a celebration of the crisp and the golden, of the deep-fried, pan-fried and even the stir-fried. May the low-fat era rest in peace.
