Many holidays are celebrated with special breads, but none more than Easter. Like the egg, grain symbolizes rebirth and new life. It’s no accident that many of the sweet Easter breads actually contain whole eggs.

Western Europe has its share--England’s hot cross buns, the coffee cake-like Easter breads of Scandinavia. But it’s in Eastern Europe and the Mediterranean that we find a real profusion of Easter breads, from the anise-scented rosquillas of Spain to the imposing cylindrical kulich of Russia.
