Rarebit Rides a Baked Potato

Thanks for the rarebit recipe (“Buffet Line at the Castle,” July 29). In York, England, in 1990, my daughter ordered what turned out to be Welsh rarebit over baked potatoes. I asked for the recipe, and they told me the key was sharp Cheddar and beer.

My “Joy of Cooking” has a rarebit with beer, which we have been using over baked potatoes ever since. With a salad, it makes a great, easy weekend main dish. The proportions are a bit different so I will try yours for comparison.
