When you’ve written “The Complete Book of Breads” and “The New Complete Book of Breads,” you’ve got to start thinking small. And so Bernard Clayton Jr., who was writing bread cookbooks long before the latest sourdough renaissance, has come out with “Bernard Clayton’s Complete Book of Small Breads” (Simon & Schuster, $25). That means beaten biscuits and Czech sweet buns, butter croissants and Mexican pan dulce.
