Brocco-Tofu Crunchy Couscous

I call this quick, easy dinner Crunchy Chewy Couscous. Drain and crumble a package of very firm tofu into a skillet with a little olive oil. Chop some broccoli florets and some onion (sweet onion works nicely) and toss with the tofu. Give a few liberal splashes of tamari or soy sauce and a few shakes of garlic powder. Stir-fry for approximately 6 or 7 minutes until broccoli is tender-crisp and tofu is nicely browned.

Prepare couscous according to package directions. Then combine couscous with broccoli-tofu mixture. Add some chopped walnuts or golden raisins. Top with a little more tamari. Prepare a salad, and you’re ready for a delicious, healthful and satisfying meal.
