“Last night I went to Il Fornaio in Pasadena with a customer. I had herbed chicken pounded thin, real Milanese style, sauteed quickly in olive oil and topped with a lemon wedge. It’s called chicken battuta; battuta means pounded. With this I had sauteed spinach with a little garlic and olive oil and some mashed potatoes. Very simple. That’s what I felt like.”
