A Melt for the Svelte

A low-fat “melt?” Normally, you’d say there’s no such thing. Melts are usually filled with fatty things such as tuna salad and gushy melted cheese.

But this one cuts back substantially on the mayo (low-fat, at that) and relies on shrimp’s natural sweetness to carry the dish. A little bit of low-fat yogurt cheese sprinkled over the top and then browning give the requisite “gush.”

Shrimp Melt

Active Work Time: 15 minutes * Total Preparation Time: 30 minutes

1/2 pound peeled, cooked shrimp, finely chopped, about 1 1/2 cups

1/4 cup minced celery

1 tablespoon minced green onion

1 tablespoon minced cilantro

1 small clove garlic, minced

1/4 cup low-fat mayonnaise

3 whole-grain English muffins, split in half and toasted

3 ounces shredded yogurt cheese

* Combine shrimp, celery, green onion, cilantro and garlic. Stir in mayonnaise. Divide shrimp mixture among 6 toasted English muffin halves, spreading gently to edges. Top with cheese.

* Place on baking sheet and bake at 375 degrees until cheese is melted and browned and filling is hot through, 8 to 10 minutes.

6 servings. Each serving: 170 calories; 283 mg sodium; 76 mg cholesterol; 6 grams fat; 13 grams carbohydrates; 13 grams protein; 2.06 grams fiber.
