La Pizza Francaise

We love homemade, easy pizzas at our house. I call this one Pizza Nicoise. We use individual store-bought pizza shells with ingredients from the pantry: marinated artichoke hearts, pasta sauce, capers and sliced black olives. If you have time, pick up Nicoise or Kalamata olives on the way home. A bag of assorted shredded cheeses rounds out the ingredients. Spread the pasta sauce on the pizza shells, sprinkle with shredded cheese, add the artichoke hearts (drained and cut in half), sliced olives and capers and top with more shredded cheese. Bake the pizzas at 350 degrees until bubbly and warm. If you’re so inclined, you can also add thin caramelized onion slices as a topping. A salad of baby lettuces and a spicy Zinfandel make for a delicious, quick and easy dinner.
