Whoever thought donating to charity could taste good?

As part of its 20th anniversary celebration, proceeds from all egg rolls sold at Ruby Palace Chinese Restaurant in Huntington Beach from Dec. 10 through the end of the year will be donated to charity.

The restaurant, at 18330 Beach Blvd., will give the money to the Huntington Beach Community Clinic, where fees for health services are determined on a sliding scale based on income and family size.

The anniversary celebration features three days of noodle-making demonstrations, a Chinese custom that many chefs take years to perfect, according to the restaurant’s owners. The noodles will be available to customers immediately after they are made.

“The key to the tradition of this ceremony is to create long noodles. The longer the noodles, the longer life one can expect to live,” said Domingo Hsu, the restaurant’s manager.

Ruby Palace was started by his parents Hsueh and Ruby Hsu, both of whom are still active in running the restaurant. Ruby Hsu personally seats the customers and also makes the egg rolls.
