Scrambling for Dinner

Although I love to cook, some days I just don’t want to think about dinner, especially if I’ve been in school all day (I’m studying for a master’s degree in nutrition). I have two sons, ages 7 and 10, who can be picky eaters. On busy days, a sure winner with my boys is scrambled eggs and Polish sausage in pita bread.

Simmer the Polish sausage in about an inch of water until heated through, 5 to 10 minutes. Whip up 4 eggs, adding 1 or 2 tablespoons of water (milk makes them runny) and scramble them in a little oil or butter. Slice the sausage and place slices and some egg in pita bread. Eat the pitas as you would a sandwich. For added flavor, you can top them with a little salsa and low-fat sour cream.
