Desperate Noodles

This recipe for One-Pot Tuna Noodles calls for things that are commonly kept in the pantry and freezer. So it’s great when you’ve forgotten to defrost the meat for dinner or are just too tired to think of anything else. I always serve it with a green salad and French bread.

In a medium saucepan, bring 3 cups water to boil; add 8 ounces wide egg noodles. Cover and simmer 5 minutes, stirring occasionally. Add 1 cup frozen mixed vegetables; cook 5 minutes more. Stir in 1 can tuna, 1 can condensed Cheddar cheese soup, 1/2 cup milk and 1/4 teaspoon pepper. Heat through. Let stand a couple of minutes then serve.
