Here’s something new in spicy noodles: kimchi ramen, as served at Sakura, the hot foods counter at Mitsuwa Marketplace in downtown Los Angeles. This Korean-Japanese fusion dish combines ramen noodles with the hotly seasoned Korean cabbage pickle kimchi and thin slices of boiled beef in broth speckled with tiny flecks of red pepper.
