“I had a bottle of Australian wine that was very interesting--a 1986 Redbank Sally’s Paddock. It’s a blend of Cabernet and Shiraz. It was still very fresh. My dad has a few more bottles of that that I want to take out of his cellar and age 10 years. It had an elegance on the palate and was nice and vibrant with a fresh acidity. It tasted like it had another 10 to 15 years of life.”
