If you need a first course for an elegant dinner, or just want to treat yourself, pick up Whole Foods’ three-mushroom soup. The mushrooms--button, portabello and shiitake--are cut fine and blended into a base of vegetable stock and cream seasoned with Sherry and thyme. The flavor is rich, but the price is reasonable because a quart would easily make six first-course servings.
