Chocolate Tofu Shake, Call It Frappe

You can blend tofu into drinks, giving them a creamy texture almost like a milkshake, but if you’re not careful, you wind up with a chalky aftertaste. The way around this is to make sure the drink has strong enough basic flavors that you won’t notice. In this frappe, the addition of instant espresso and cocoa adds a good dominant flavor while vanilla and almond extracts round the whole thing out.

Mocha Frappe

Active Work and Total Preparation Time: 5 minutes

1 cup nonfat milk

1/4 (14-ounce) carton soft tofu

1 tablespoon instant espresso powder

2 tablespoons cocoa

1/4 cup sugar

1/2 teaspoon vanilla

1/8 teaspoon almond extract

1/2 cup ice cubes

Mix milk, tofu, espresso powder, cocoa, sugar, vanilla and almond extract in a blender until smooth. Add ice cubes and blend again to chop fine. Serve cold.

2 servings. Each serving: 200 calories; 70 mg sodium; 2 mg cholesterol; 3 grams fat; 37 grams carbohydrates; 10 grams protein; 1.98 grams fiber.
