Casseroles to Crow Over

How you serve is almost as important as what you serve.

I use Le Creuset’s colorful enameled cast-iron pots for many of my casseroles. Emile Henry, a line of ceramic casseroles, is a little lighter but no less bright in hue. All-Clad makes some wonderful stainless steel braising and roasting pans; its wide, heavy-bottomed braiser-style pots are made for home chefs but take their inspiration from the professional kitchen. I also recommend enameled steel Chantal cookware for casserole dishes.
