The Manhattan Bread Co. opens at 4 a.m. on weekdays for people who can’t wait any longer for bagels and coffee. However, sleepyheads who don’t arrive until 6 a.m. get a nice reward. That’s when sandwiches and breads start to appear, and commuters stop on their way to work to pick up lunch.

The sandwich shown here contains rosemary chicken with red onions, mozzarella, lettuce and tomato in balsamic vinaigrette. The chicken is marinated, seasoned with rosemary and grilled, then placed in any of the bakery’s selection of breads. Black pepper Parmesan sourdough, the loaf shown, makes a knockout sandwich. Furthermore, you get a little cup of pasta salad with each order.
