Susan Spano always manages to get it right. “In Praise of a Simple Food That Helps the World Keep Its Sunny Side Up” (Her World, March 31) triggered a memorable moment: the sandwich I purchased from a vending machine at the train station in Belfast, Northern Ireland. My mouth waters just thinking about it: sitting on that train unwrapping the crinkly cellophane, the cool, slightly hard but tasty white bread stuck to the creamy egg salad. The best surprise, however, was discovering the minuscule pieces of bacon throughout. Delicious.
