Yucatan-Style Kibbeh

The meat and bulgur cakes called kibbeh are as popular in Yucatan as they are in the Middle East. Introduced by Lebanese immigrants, they’re now sold by street vendors and have edged out hot dogs as the favorite snack at baseball games.
Here, you can buy the Yucatecan version (spelled kibi) at Chichen Itza in the Mercado La Paloma. The mint-seasoned mixture of ground beef and bulgur wheat is formed into small patties and fried until crunchy. Accompaniments are cabbage relish, pickled red onions and a tiny container of super-hot habanero salsa.
