Zamarod challow is so laden with spinach, cilantro and dill that it deserves its Afghani name (sometimes spelled zamarrud chalau), which means emerald rice. The fresh, herbal flavor is backed up by the fragrance of basmati rice. Kabul Cuisine in Reseda mixes in a couple of pieces of grilled chicken to make the dish substantial.
