RECIPE: Will Rogers’ ‘Good Old Oklahoma Beans’

2 lbs. small white navy beans
1 generous ham hock
1 medium onion, peeled
Salt and pepper

Soak beans overnight in cold water.

In the morning, drain and cover with fresh water.

Bring to boil, add ham hock, onion, salt and pepper to taste. Simmer slowly for four hours. Add more water, if necessary, so beans will be kind of soupy.

Each serving should include a portion of ham.
