--Remember that it’s important to use liquid (glass) measuring cups for measuring all liquid ingredients and dry measuring cups (metal or plastic) for dry ingredients. Lightly spoon dry ingredients into the exact cup size specified in the recipe. Pile high, then level off evenly across the top with a metal spatula or straight-sided knife. Do not pack the ingredient by shaking or tapping the cup, as this can effect the end product.

--As a general rule, dry ingredients and liquid ingredients are first combined separately, then blended only until moist.

--By using a rubber spatula and a quick stirring-folding motion, ingredients can be combined quickly and with minimal agitation.

--It’s important not to overmix muffin batter. The texture of baked muffins will be lighter if the batter is mixed just until there are no streaks of dry ingredients. Batters may appear slightly lumpy, but the ingredients will continue to blend during baking. A smooth batter is often a sign that it is overmixed.

--Glass baking dishes, 4 inches in diameter, were used for testing the maxi muffin recipes.

--As a general rule, about three times as many standard-size muffins can be made from each maxi muffin recipe. When using metal pans, increase the oven temperature by 25 degrees. Baking times for the standard (2 1/2-inch) size will need to be reduced. Check for doneness after about 20 minutes.

--Regardless of size, be certain to generously grease baking cups or muffin tins. A small paint brush is excellent to use for spreading the softened butter. Then fill no more than three-quarters full.

--Relatively high temperatures and short baking times are used for baking muffins. It’s important that the oven be preheated to the correct temperature so the muffins will rise properly.

--For maximum flavor, allow muffins to stand five to 10 minutes before serving.

--Muffins reheat well if wrapped loosely in foil and baked at 350 degrees for 10 to 15 minutes or until heated through.
