Kiwi, Citrus in Memorial Day Dessert

Treat family and friends to a surprise dessert to end your Memorial Day party. Kiwi and delicate citrus flavors enhance a creamy version of classic lemon pie. FRUITED CUSTARD PIE

2 cups milk

1 cup sugar

3 tablespoons cornstarch

4 egg yolks

Juice and grated peel of 2 lemons

Juice and grated peel of 2 tangerines

1 (9-inch) prepared pie shell

2 kiwi, peeled and sliced

3 tablespoons orange marmalade

Bring milk to scalding point. Mix together sugar and cornstarch. Whisk in egg yolks. Slowly whisk in milk. Return mixture to heat. Add fruit juices and peels and cook, stirring, until mixture thickens.

Pour filling into pie crust. Bake at 350 degrees 30 to 35 minutes or until set. Cool on wire rack.

Arrange kiwi slices over top of pie. Heat marmalade and brush over fruit to glaze. Makes 8 to 10 servings.

Note: 1 orange may be substituted for tangerines.
