Glazed Lamb Patties : Making a Memorable, Economical Treat

Even if the food budget is tight, Glazed Lamb Patties will fit well into menu plans. Economical ground lamb, bread crumbs and egg are seasoned with marjoram and shaped into patties. Currant jelly is used to glaze the meat while it broils. GLAZED LAMB PATTIES

1 1/2 pounds ground lamb

1 cup soft bread crumbs

1/4 cup milk

1 egg, beaten

1 teaspoon salt

1/4 teaspoon marjoram

2 tablespoons currant jelly

1/2 teaspoon lemon juice

Combine lamb, bread crumbs, milk, egg, salt and marjoram. Mix lightly and shape into 6 patties, 1/2 inch thick. Place on rack in broiler pan so meat is 3 inches from source of heat.

Broil 6 minutes on first side, then turn and broil 8 to 10 minutes to doneness desired. Meanwhile, melt jelly in small saucepan. Stir in lemon juice. Brush patties with glaze 2 to 3 minutes before end of cooking time. Makes 6 servings.
