Eating as many as three eggs a day will not elevate blood cholesterol or increase heart disease risk for most people, a medical study of 70 people conducted at the University of Missouri concluded. Margaret Flynn, professor of nutrition at the school, said that, contrary to current popular belief, 85% of Americans need not worry about how many eggs they eat because the research found that a high-cholesterol diet does not raise cholesterol levels in the blood. High blood cholesterol is considered indicative of stroke and heart attack risk.
