I quote from “A New Kind of Shortcake” (March 22, by Edena Sheldon): “As winter’s chill leaves us, culinary thoughts turn from stews and hearty soups to lighter food.” I truly think the author meant that culinary thoughts turn to high-cholesterol sauces to disguise our delicious young vegetables. I know no one who wants a sauce, like your hollandaise, with so much butter in it. Are you sure this food presentation was made for California?
