The Toast of Breakfast

“One of my favorite breakfast recipes is what I call ‘Scrambled Eggs in a Blanket,’ ” Audrey J. Morgan writes. “It’s an original recipe created by myself because of a lack of toast one morning. My husband and five children think this is a real treat, and it’s so quick and easy. It can be spiced, fancy or simple, as tastes may vary.”

1 cup chopped onions

8 ounces mushrooms, sliced

1/2 green pepper, chopped

Butter or margarine

8 flour tortillas

6 to 8 eggs

2 to 3 tablespoons milk or cream

Salt, pepper

1/2 cup shredded cheese

Salsa or catsup

Fresh fruit

Saute onions, mushrooms and green pepper in 1 tablespoon butter until tender. Set aside in bowl. Heat tortillas in microwave or conventional oven until warm. Cover and set aside. Beat eggs and milk together. Cook scrambled style with about 3 tablespoons melted butter in skillet. Divide eggs and spoon onto tortillas. Season to taste with salt and pepper. Add sauteed vegetable filling as desired. Spoon in cheese and salsa. Roll up tortilla and fold one end up so filling stays in. Serve with fresh fruit. Makes 6 to 8 servings.
