Pancakes With Piquant Flavor : Start Off Dad’s Special Day With a Hearty Breakfast

Start Dad’s special day off right with a delicious breakfast or brunch featuring Banana Buttermilk Flapjacks. Bananas lend a piquant, fruity flavor to this time-honored menu favorite.

The batter takes only minutes to prepare. Pour onto a piping hot griddle and grill until golden brown on both sides. Serve hot, accompanied by maple syrup, bacon or sausage. Add hot coffee and you have and ideal Father’s Day menu.

BANANA BUTTERMILK FLAPJACKS

2 teaspoons baking soda

2 cups buttermilk

2 cups flour

2 eggs

3 tablespoons melted butter

1 1/2 teaspoons salt

2 cups sliced bananas

Maple syrup

Dissolve baking soda in buttermilk in large bowl. Add flour, eggs, butter and salt. Stir lightly. Batter should be streaky and lumpy. Gently fold in bananas.

Drop by spoonfuls onto hot, lightly oiled griddle or skillet. Turn when bubbles begin to break. Cook until golden brown. Serve with maple syrup. Makes about 1 1/2 dozen (4-inch) pancakes.

Note: Batter thickens upon standing. If necessary, thin with up to 1/2 cup additional buttermilk, milk or water.
