Mexican Mainstays in Fajitas

This recipe for Pollo Fajitas features culinary Mexican mainstays like flour tortillas, spicy chili powder, grated cheese and cool, soothing sour cream.

The variation is elegant and tasty, and calls for the choicest pieces of boneless and skinless chicken thigh and drumstick meat.

POLLO FAJITAS

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

1 tablespoon vinegar

1 teaspoon chili powder

1 clove garlic, minced

Dash hot pepper sauce or ground red pepper

Salt

1 to 1 1/2 pounds chicken thighs or thigh/drumstick meat, cut into strips

1 to 2 tablespoons oil

1 medium onion, sliced

1 green pepper, sliced

1/2 lemon

4 flour tortillas

Avocado slices

Sour cream, optional

Chopped cilantro, optional

Combine Worcestershire and soy sauces, vinegar, chili powder, garlic, hot pepper sauce and salt. Add chicken and stir-fry in hot oil until chicken is no longer pink, about 3 minutes.

Add onion and pepper and stir-fry until vegetables are tender. Squeeze juice from lemon over chicken and vegetables just before serving. Serve with flour tortillas, avocado, sour cream and cilantro. Makes 4 servings.
