This lush, colorful dessert has a star-shaped topping and a cinnamon-graham cracker crust. To complete the patriotic theme, select blue- or red-hued fruits such as blueberries, raspberries, strawberries or any combination thereof to top the sour cream filling.

CINNAMON FRUIT TART WITH SOUR CREAM FILLING

1 envelope unflavored gelatin

1/4 cup cold water

1 cup creamed cottage cheese

3/4 cup pineapple juice

1/2 cup sour cream

1/2 cup milk

1/4 cup sugar

1 teaspoon lemon juice

Cinnamon-Graham Cracker Crust

2 cups sliced strawberries, blueberries or raspberries

2 tablespoons orange or apricot marmalade, melted

Sprinkle gelatin over cold water in small saucepan and let stand 1 minute until softened. Stir over low heat until gelatin is completely dissolved, about 3 minutes.

Combine cottage cheese, juice, sour cream, milk, sugar and lemon juice in food processor or blender and process until blended. While processing, through feed cap, gradually add gelatin and process until blended. Pour into Cinnamon-Graham Cracker Crust and chill until firm, about 3 hours.

To serve, top with desired fruit, then brush with marmalade. Makes 12 servings.

Cinnamon-Graham Cracker Crust

2 cups graham cracker crumbs

1 tablespoon sugar

1/2 teaspoon ground cinnamon

1/4 cup melted butter or margarine

1 tablespoon water

Combine crumbs, sugar and cinnamon in bowl. Combine butter and water and add to mixture, mixing well. Press into 10-inch tart pan and refrigerate about 30 minutes before filling.
