Pepperidge Farm Inc., prompted by what it called “strong consumer concern,” has announced plans to remove a coconut oil from its crackers and cookies by next summer. Officers of the Norwalk-based company said the oil will be removed from such products as the popular Goldfish crackers. Coconut oil is a saturated fat that raises cholesterol levels, posing a greater risk of clogged arteries for people with already high levels. The move will ultimately save thousands of lives, said Phil Sokolof, founder of National Heart Savers, which has been campaigning against the use of coconut oil.
